Tangy Brinjal Curry

 Here's a simple recipe for Tangy Brinjal Curry to complement Ambur Biryani:


Ingredients for Tangy Brinjal Curry:

- 4-5 small brinjals, sliced

- 1 large onion, finely chopped

- 2 tomatoes, chopped

- 1/4 cup tamarind pulp

- 1 teaspoon mustard seeds

- 1 teaspoon cumin seeds

- 1/2 teaspoon fenugreek seeds

- 1/2 teaspoon turmeric powder

- 1 teaspoon red chili powder

- 1 tablespoon sambar powder

- 2 tablespoons oil

- Salt to taste

- Fresh coriander leaves for garnish


Instructions:


1. Heat oil in a pan, add mustard seeds, cumin seeds, and fenugreek seeds. Allow them to splutter.


2. Add chopped onions and sauté until golden brown.


3. Add sliced brinjals and cook until they are partially tender.


4. Add chopped tomatoes, turmeric powder, red chili powder, and sambar powder. Cook until the tomatoes are soft.


5. Pour in the tamarind pulp, add salt, and mix well. Simmer until the brinjals are fully cooked and the curry thickens.


6. Garnish with fresh coriander leaves.


Serve this tangy brinjal curry alongside Ambur Biryani for a delightful meal!
